Fast and Easy Dinner Party Recipe Ideas

easy dinner party recipeTuscan Tuna Salad
Serves: 4
Time: 10 minutes

Ingredients:

2 (16-ounce) cans cannellini beans, rinsed and drained
1 tablespoon extra-virgin olive oil
1 (12-ounce) can solid-pack white albacore tuna in water, drained and flaked
1/2 medium red onion, thinly sliced
1/4 cup chopped fresh basil
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon freshly ground black pepper

Directions:

Combine the beans and oil in a large bowl and mix well. Add the tuna, onions, basil, lemon juice and pepper; mix well.

easy dinner party recipeGnocchi With Toasted Garlic, Walnuts, and Bitter Greens
Serves: 4
Time: 5 minutes

Ingredients:

2 (17.5-ounce) packages fresh potato gnocchi
3/4 cup extra virgin olive oil
5 cloves garlic, chopped
1 1/4 cups walnut halves, slightly crushed
3 cups packaged mixed bitter greens (collard, mustard, and turnip greens)
Salt and freshly ground pepper
1 cup grated Pecorino-Romano cheese

Directions:

Bring a large pot of salted water to a boil. Add gnocchi and cook according to the package instructions. Drain. Meanwhile, heat the olive oil in a large saute pan until hot. Add the garlic and walnuts and cook until the garlic is a dep golden brown and nuts are aromatic, about 3 minutes. Add the greens and season with salt and pepper. Cook, stirring frequently, until the greens are wilted. Add the gnocchi to the pan and toss to coat. Sprinkle with the Pecorino-Romano. Taste and adjust the seasoning if necessary. Serve immediately.

Serves: 4
Time: 15 minutes

Ingredients:

1 (10-ounce) package frozen chopped spinach, thawed and drained
1 cup shredded fresh Parmesan cheese
3/4 cup low-fat cottage cheese
1⁄2 cup skim milk
1 tablespoon extra-virgin olive oil
1 garlic clove, halved
3/4 teaspoon dried oregano, crushed
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/8 teaspoon crushed red-pepper flakes
12 ounces fresh tomato-basil fettuccine

Directions:

In a blender or food processor, combine the spinach, Parmesan, cottage cheese, milk, oil, garlic, oregano, black pepper, nutmeg, salt and red-pepper flakes. Blend until smooth and evenly green in color. Pour the sauce into a medium saucepan and warm over medium heat. Cook the fettuccine in a large pot of boiling water for about 2 minutes, or until tender but still firm to the bite. Drain thoroughly in a colander. Serve topped with the sauce.
